Thank u so much... my father is from Georgetown, Guyana. My grandmother used to make these for me... After she died, I lived in Canada my whole life, it was difficult to find places that make this type of roti. My mom is French so she does not know how. I will try to make this at home and let my son grow to love caribbean food as I do. He is only 22 months and already loves my curry. People in Nova Scotia, where I live now, have not even heard of it

That recipe recommends soaking the split peas overnight or for a couple of hours before cooking which is a good tip I think. Chris, I cannot get my roti to puff, do you know what can be causing this. Is it because I am using an electric stove? I get the bubbles but thats about it, and I use medium to high heat on for the burner under the tava.
@Augustus212 can be too less baking powder or holes in the roti thats causing the steam to escape rather than swell the roti. also the flour should be needed soft. it should feel very flexible while youre rolling it out

@shuam01 For the filling 1 teaspoon salt 1/4 teaspoon turmeric 2 cloves garlic 1 teaspoon ground roasted geera (cumin) 2 cups split peas (dhal) 1/4 of a scotch bonnet pepper (or any hot pepper you like) For the dough (actual roti) 3 cups all purpose flour pinch fast acting yeast 1/4 teaspoon salt 2 tablespoon baking powder water (see note below) * 5 tablespoon vegetable oil (for brushing the roti while it cooks)
It is important to pay attention to the length of time that you boil the split peas. Over boiling can cause the peas to become mushy and soft rather than have a grainy texture. It is best to constantly check the peas by placing a few grains between your fingers and squeezing it. If the grains crushes when pressed but does not flatten as pulp, it should be ok then.
Thanks for the recipe, dhalpuri roti making takes practice to get that softness, and I have been wondering whether or not to add a little yeast but never really seen a recipe that does, even in Naparima Girls cookbook and others from T&T. Should the dough be soft and sticky and barely able to touch when kneading? I've used some powdered milk which helps as well. Please keep the recipe's coming.... real appreciate it!
filling can be really tricky..especially how you flatten the dough before. I make the edges thinner than the centre - it forms likea cup-then really put in the filling. It would be good to see the technique of those obviously experienced hands.

it is a dahl puri not a roti. Puri and roti ar two different types of indian breads. dahl puri is a puri stuffed with dahl.
