A thermometer is a great tool to have when cooking a turkey. How many cases of food poisoning could be prevented by cooking to the correct internal temperature?
Great point, I use a digital thermometer set to less than 165 so that it gets up to 165 when I take the bird out and it's resting. That said, well done, informative but not boring info.
I really like a probe style thermometer, like the Polder. It has a probe that goes in the bird, or whatever you are roasting, which attaches to a "brain" that stays outside the oven, and beeps when your roast reaches the desired temperature.
This COMPLETELY eliminates any guesswork. No need to open the oven door to check the temp, then guessing that it needs another 20 min, or checking too late and discovering your roast is already overdone. And the readout is right there and easy to see.

Chef Todd, what happened to all the old episodes of Cooking Coarse that used to be on Youtube. Those were my favorite and now I have to suffer Alton Brown and all his Good Eats recipes. Bring Back cooking coarse.
