He didn't really changed the lightsabers colors himself, he has chosen a color, like "blue", to change it with "Red" or "Blue".

We also notice, at 1:45, that Obi-wan's lightsaber changes. When the camera is behind Anakin, the saber in Obi-wan's hand is Anakin's saber. When the camera faces Anakin, the saber in Obi-wan's hand is his own saber.
