I was using an Enduro Engineering tall firm seat. I found it to be pretty comfy on the trip. I stand a lot also so that helps. I would recommend the seat. The firmer foam is better for distance riding.

Best bike depends on what your wanting to do and how you ride. I loved my KTM on the trip, on the road sections the GS was the best. The XRR is great all around. All the bikes performed really well on the trip.
