  • I like this idea, never heard of it till now. I usually cook my steaks pittsburgh rare, so doneness, or lack of it, is not too hard to do. Burn the outside to a crisp on a red hot skillet, and you are done

  • The whole technique of testing doneness with feel is exactly the way to do it, but I've found using any of the finger things isn't real effective. It basically just has to come from experience. The more steaks you cook, the better you are at judging how a particular doneness feels. Also, the first cubes of meat look right, but those cubes of meat that she demonstrates on don't seem very acurate. I would call the first one medium rare, and I would call both the last ones well done.

  • From my 2.5 years cooking here in Vegas, no cook in any hotel / restaurant ever uses their thermo to check the doness of steaks. Unless your cooking a steamship / prime rib... everything is feel to the touch. I work at a steak house, and you can just tell by the texture sometimes what state the piece of meat is at sometimes... wheather that is pork, NY strip, filet etc.

  • Its not that hot. You don't get burned. Reaching for a hotplate you think is cool but has been in the oven burns you and that happens more in reality
