How come Locke survided when Sayid stabbed him, but Jacob died when (Ben) Linus stabbed him.

Because Jacob is only protected from the MIB. MIB is a god of sorts, at least that's what I think.

Ben killing Jacob was a test. A test to see if it's true that any human being can be corrupted given the circumstances.

Jacob believes that not everyone is corruptable, whilst the MIB believes all human beings can be corrupted... given what they want. In this case it was power.

Jacob just stood there and let Ben stab him because he hoped that he was truely right about human beings... he wasn't.
