hi, be very careful with your made in china sunbeam mixer. if it fails, there are NO parts available to repair it. like many companies that have appliances made in china, they import the appliances not the parts to repair them. made in china usually means disposable machine. how do i know this? I work at Kiefer Appliance in Madison, WI. and we have to turn away many potential customers because of no parts being available.

Do you have to refrigerate the dough so you can roll it and cut? Or do you do it right after you mixed?

@pandane I make these every year for christmas. Instead of the cookie cutter idea, use a cookie gun, you know, it comresses a cookie through an outline of a shape? That way, you don't have to roll it out, and it's easier to put on the pan.
