the assitance keeps you from stalling and also makes the plane alot easier to controle while you can see the objective and and were your enemies are. so its alot easier to fly in assistance mode on

I am using a professional PVR device (these recording are off the 360 version of the game), but you can use consumer PVR devices as well. Just gotta be sure the one you get has the proper inputs and outputs. If you want to record games on your computer, check out Gamecam or Fraps.

Does the game automatically put the missile cam everytime? Or was it you making it annoying just for the heck of it?

That would be me doing it manually. If you keep the missle cam on you can actually tell if you hit the target, they also seem to track the target better.. hence the timer at the top of the screen in that view.
