You might be able to get by with a cheap stun-gun. You might have to modify it a bit to keep it from breaking in case of accidental droppage, clashing of weapons, etc. Also, it'd only be good for simulating a stabbing weapon like a shiv.

The empty hand is difficult to use in fighting when dealing with the knife. It is a last resort when the distance closes. (Close range is where both fighters usually die.) We do sparring with various sized blades.
Those things are great training tools. They're just really expensive to get a hold of. You definitely will benefit from using these, even with you hand vs. knife drills.

On the price, personally, I think they are more than worth every penny for the increased skill development and personal development that comes with realistic training.
Thanks for the comments. Knife attacks do happen. We must keep the training out of the realm of fantasy and securely in reality. I assume that one of my students may one day need to call on the training, and it is my job to prepare them as well as I can.
Great video! Too often people train for Mutual Assured Destruction when it comes to knife. The shockknife definitely makes you respect things a little more.
One possible alternative to the long-range-I-don't-want-to-get-cut strategy is to smother the knife attack, to boldly go in and not allow the opponent the advantage of his reach or quickness, a la Silat. Burton's double wrist grab against the attacker's knife hand/arm is a simple, but effective way to do this. He will be concentrating on the fact that you've immobolized his knife hand.

The moment you use a harder knife (and this entails a little more pain), there is less recklessness (but less trading).
