no he didn't die. He was stuck in the sarlacc for a short period of time, during which the sarlacc ate one of his legs off to the knee. He tricked the sarlacc into moving him along the inside of it's belly which triggered his jetpack. The sarlacc released him and he fired several grenades into the sarlacc. Then he crawled out and was found. The sarlacc survived but Fett returns later and I think incinerates the sarlacc with Slave 2's engines.

Yeah, in the recent books, he's around 70 or 80 and he's still in good shape and bounty hunting, though, he actually spent a few days in the sarlacc and finally got out by killing it with his flamethrower. All his armor is gone by the acid and he is saved by Dengar.
