Plus professionally recorded metal will record each instrument separately to then be edited and put together on a computer based program.

Just as you have to learn how to play an instrument, you have to learn how to work the software and hardware involved in this kind of music. I'm pretty sure I could hand you an interface, a midi controller, and a copy of pro tools, and you'd be lost as fuck.
