One burner? Stir fries would be the best, although the wife just bought this BBQer that sits on your burner and works like an oven/grill. It's awesome and only cost about 70k.

Curry, Japanese kind you buy in blocks. Make it how you like, chicken, potato, carrots etc. But also grate one small apple and add 3 table spoons of honey. Simmer as long as possible, about an hour on very low heat is best, but not manditory. Serve over rice (you do have a rice cooker right?). I love this one pot meal in the winter.
Smashed potatoes with herbs (cooked in the pot) with ham or bacon sauté in the pan. Easy to cook and to eat, especially for somebody tired. Warms you up. With a Riesling. Don't forget the candles.

I'm going for fried rice - even if the rice gets cold while you're frying the rest of the stuff, it will warm when you toss it in. Shrimp, some veggies, an egg, a tiny pepper and some seasoning and you've got it. Lovely, celebratory and doable. on a single burner. If you don't have a wok, you might want to get one.

Top ramen is crap! The stuff we have here in Korea is tons better than Top Ramen. In fact, there are two types of Spicy 라면 that I really like mixed with rice, meat, cheese, and ionions..... all rolled into 김.
With a pan and a pot, you can work wonders. I don't know what the two of you like or dislike but, I would make some type of pot roast with the veggies, potatoes, etc. I'm a simple man. lol You do look quite happy with Jo's arrival soon to come.
