I practically spend 3 - 6 hours per session, about 4 - 5 times a week. It's time consuming, yes, if you sit there the entire time.

I depends. If you want a good warrior choose a night elf. If you want a good paladin either choose a Human or a dwarf. If you want a good mage you might want to choose gnome. If good druid, night elf. If good priest, I think any of them is good enough lol
