an 8inch fruit cake will yield alot more than '8' servings. Fruit cake is supposed to be served in small slices, Cut correctly it should give up at least 30 servings. Also A layer of brown paper should be wrapped around the tin, to prevent the sides from burning/ getting to crisp and dark while cooking. the cake can be made months in advance and kept upto a year, Wrapped correctly in greaseproof and tinfoil, fed weekly with brandy and you will have the perfect christmas cake.
