This is great! Uprated. Shared. The pig's ears I had in NY were too chewy and indifferent, but I never had them home made. Now I can get a whole pig's head here outside Paris and try this, but we are a family of two, so I will have to plan for all that meat. Yay! Pork is a staple food, here in France. There is practically no way to avoid it, not even in bread.
