My interpretation is that she is different from other (shallow) women he is surrounded by - Bateman even introduces her by saying 'My secretary, Jean, who is in love with me and who I will probably end up marrying'. I think he loathes women who epitomises what he sees in pornography.

All of the girls who Bateman murders in the book tend to be escorts, prostitutes or models - noticeably he doesn't kill Evelyn or Luis either.
