I wouldn't really classify this as Doom Metal, doom would be like...Mourning Beloveth or Candlemass or the ever popular Black Sabbath, this is too mellow to be doom metal in my opinion.

Meh, in my mind their more doom/gloom style, it's not an official genre or anything, that's just how I classify it in my head. Doom metal is alot heavier on the musical side in my opinion. All the bands you list would either go under my doom/gloom list, or just good metal.
