You are right... holding shift will not work in zbrush 4 anymore. But you can now click the 'select topo' button in the topology rollout. it will rebuild the whole mesh instantly.
dude...i just saw this vid after retopping for an hour and without saving and crashing. I'l like...thats all you have to do is hold shift! But, like you. I'm on a mac and as soon as I let go of the shift key...Bam! I'm just glad I dont crash like this in my car!...lol have you found a way around this yet, other than trashing the mac and getting a pc?
