That super-strong elastic band looks like a great way to fling the bowl somewhere unexpected! ... and if it's to be put somewhere "not in a draught" the band isn't necessary anyway? I just leave the bowl in a sink of hot water (fast and easy to keep an eye on).
To expound on the comments of Eggness, The dough will be fine with plastic wrap or even a dish towel as long as you don't put it in a place above 105-110 degrees. You also don't knock a bunch of stuff on the floor in the process. For those with who can wait, cold rising in a fridge, (18-24 hours) does produce a better flavor and consistency. If you gotta have it now, 45 min rise followed by punchdown, and additional 30 min rise will produce an excellent result. Cold and slow is the best.

You should have done another take. You look silly knocking things off of the table. Also plastic wrap would be fine and even better than wax paper.
A much slower rise in the refrigerator (18-24 hours) would produce a much tastier crust anyway. I guess some people aren't that patient, though.

2. Wax on the paper will melt before Saran Wrap will.

@3. No, you are incorrect, Saran Wrap will melt, UNLESS you get the type that is specifically made for the high-heat and over use.
The woman in this video should have really thought things through a little more before doing it, as she made a fool out of herself.

She does not explain why it needs to rise.
Dough has to rise to give it consistency.
