Yes, you can use chicken. Parang sinampalukan. But make sure you add ginger during the boiling part of it while you're waiting for the chicken to be fork tender. And you can also use beef but it'll be longer for you to cook this and there'll be more fat.
Barbaric? Unfortunately, I didn't find any small pork ribs at Ralphs. It's ok my husband preferred this because it has more meat. Thanks for your comment.

That was a great technique. YOu boiled the taro root first. Usually the taro root gets cooked while cooking.. :)
