  • @MissAri73 Butter would do; someone else suggested coconut oil or extra virgin olive oil - but I've never tried either of those. Another possibility is vegan butter, tho I haven't tried that one either. Hope this helps.

  • @tantrume3 Basically it's a fat that is solid at room temperature. In pastries you use butter, lard, or something like crisco.

  • @genickos Yes, definitely. If you're following a recipe, what does it suggest? I looked up a couple of recipes - one suggested pre-baking for 15 minutes prior to adding egg filling and another said to pour egg filling into pie shell and bake. If you're not following a recipe, personally I'd pre-bake it, then add the egg filling. Just watch that the pie crust edges don't burn.

  • Do you know that lard (pig fat) has NO TRANS FAT ? Why not use that ? Natural lard has no trans fat unless its hydrogenated. Get some non-hydrogenated lard and you should be good to go. Its cheaper, has more flavor, produces flakier and moist pie crust and can make your 90 year old momma achieve an orgasm. Why and why for fucks sake do you use vegetable shortening why ?????

  • Waaaaaaaaay too much handling of that dough. Every time you touch it, you are making it tougher. 1/10 that much handling and you will have a melt in your mouth crust.

  • @AmidProcrastination There already is! Look up Tomato Pie - that's what Catherine's partner, Tricia, made with this pie crust after it was made. =) Quite often it is listed in the 'Suggestion' panel, just to the right ->

    Hope you have a chance to make both, cuz they're really good!

  • why don't you use a blender to make pate brisée as 99.9% of pastry chefs do? The less you use your hands in this kind of preparations the better the pastry comes out. Also, you have to butter the bottom of your pan because of heat distribution, it does't matter if the dough contains butter already. Forget the shortening and poke the bottom of your pastry with a fork or it will deform in the oven.

  • Can you use no salt butter, Margarine besides butter.? Can you make a crust with just shortning.? How long do you leave the ball in the fridge.? I have never made a pie before and want to try a cherry pie as my first..if you excuse the levity..lol..

  • Absolutely fantastic!! My sisters and I got together today and made meat pies for the first time! They turned out perfectly. Wonderful video, very clear and concise directions and the recipe works! We are getting together on Christmas Eve to enjoy these delicious pies. Merry Christmas : )

  • Wait, isn't this channel supposed to support sustainably grown and processed food? Why is there shortening in this recipe? Shortening is one of, if not the most processed ingredient available to the home cook. It's incredibly unhealthy and unsustainable, especially the soy and cottonseed based varieties.

    How about using lard or all butter? Lard rendered from local pig fat is available in lots of places around the country, and it's much healthier and more natural.

  • Personally, Vivalarachie, I use only butter when I make pie crusts at home for my family and friends. I agree with you about shortening...as Dr. Andrew Weil says, Shortening shortens life! That said, this is Catherine's recipe. I know many bakers who still use shortening in their pie crust & wont leave it out. Ultimately, the choice is up to you!

  • I understand that this is her recipe and she's free to use whatever ingredients she prefers, but it seems a bit contradictory to feature a recipe that uses shortening on a channel that's supposed to promote sustainable food production. That would be like posting a (real) chicken pot pie recipe on a vegetarian channel - it just doesn't fit. I liked that she did everything by hand, but I always cringe when I read recipes that call for shortening, and this is the last place I expected to find it.

  • I agree and I like the veg channel comparison. I'm kinda really disappointed in this. And in general, I kinda feel let down. Once she said shortening I paused the video. Frankly I'm let down. And again I'm disappointed in this channel.
