I'm cookin your beans! I have a question - did you let the water cook down? My crock pot is filled with beans (kinda over estimated had no idea it would be this many), and I would like to thicken the sauce but not sure what I should use. I'm going to try the mushing beans idea since there are so many! Did you add tomato sauce? Yours look more red than mine, mine look more brown.
Any ideas you have on the sauce would help me a lot.
@spygirl43 You may want to consider taking out some of those beans? My water didn't cook down a whole lot. It thickened up just a teeny beat with mashing the beans. I did not add tomato sauce.
@CookingAndCrafting Actually the sauce did cook down quite a bit and thicken up. I had more room when I took out the ham hocks. I had to search all over for those hocks! The beans taste amazing but I'm not thrilled with the sausage I used. I used a garlic sausage and it just doesn't seem to go with it. I'm going to take most of it out and just cut small pieces of sausage. Thanks for the recipe. I'm sure everyone is going to love these this weekend.
it's like turkish food " kurufasulye" , but it's cooking different way. We like eat kurufasulye with rice too, and we call rice "pilav", i think you should try turkish food :)) İf you want, i can share with you some turkish food's recipes.

The next day or two, she added additional ingredients and turned it into Portuguese Bean Soup. I have never seen Red Beans & Rice before ((just heard about it) but know that it is a southern dish. I find it interesting that it is very similar to the Portuguese food my my mom and grandma made. Makes me wonder the origin of this dish. Veddy, veddy, interesting indeed!

I've been told by more than one Cajun cook that you *never* salt beans before you cook them, because it makes them tough. You add it *after*. I tend to not argue with anyone who's holding a meat cleaver, and I've found, via non certified experiments, that they do seem to have a more tender texture when you hold off.
This looks like an excellent recipe! My only real variant is that I've gone totally over to brown rice. YUM!

We generally eat 50/50 brown/white. Yum. We call it Hapa Rice :))
I especially like La Hot Sauce better than Tabasco it's milder and has more flavor in my opinion. I don't like that tongue scorching Tabasco gives. I put LHS on everything lol

That is too much meat, with the ham? This meal is not very healthy. I am getting a slow cooker to cook healthy foods not fatty ones.
