But always when people are involved, the simple explanation seems to be: they are actors! Always! Now is it really THAT simple??? Just trick the viewers with complete setups of scenes that are just cut together in the end? I cant really believe it....

All he needs to do is have one of the two - probably the husband - set him up with duplicate rings already linked. When the champagne is being poured - misdirection - he switches to the linked rings and palms the real ones. At some point he passes the real rings to the husband and he switches them back while she sleeps. Quite simple.

If you pause this video at 1:02 when he holds the ring to the camera you can see a buldge in it. The man's ring has a section that is a spring loaded hinge. He can just push the woman's ring through the section and it pushes in and locks back. I love "magic"! lol
