This person is a complete moron, no idea how to fucking cook, the shrimp is the last thing you add, otherwise they will over cook and that wont be too appetizing, you do however, add shrimp SHELLS, together with everything else, except the mushrooms, to be strained later, you want to also use the cilantro stems for this, add garlic and fresh ginger, real chicken stock makes a huge difference , use fucking lime juice, dont put in the whole lime or otherwise it will bitter the soup,
your right the music doesnt go with the video but i LOVE that song, so it was very enjoyable. im making the recipe to take to a party at work tomorrow, by the way happy valentines day.

I tried to purchase kaffir leaves at the asian markets and wasnt able to come across any. Where would I find these within the asian market? as well as galangal. no problem! this is one of my favorite soup and the easiest too, you should make it, like tonight!
if you have no kaffir leaves or lemon grass, no problems, the soup will still taste the same, but just less herby-taste.
next time, when you do come across these two herbs, do buy them. You can save them for a long time. for kaffir leaves, put them in a zip lock and leave them in the freezer.
For lemon grass,cut off the top part (the long-dry grass looking?), and do the same.
The soup will NOT taste the same without lemon grass or kaffir lime leaves. These herbs are a staple to the broth for this soup. If you can't distinctly tell the difference between a soup made with and without these herbs, you need to revisit Thai cooking.
Also, I recommend leaving out the chilli paste. Soup should not taste too oily and that's what adding chilli paste does. You already add fresh chillies and that should provide you with enough heat.
First of all, kaffir leaves and lemon grass are not easy to find for some people, so I'm not just going to tell my viewers that they can't make this soup at all if they can't find those two herbs.
Secondly, I won't change a thing.
If you don't like this soup with the chilli paste, don't use it.

soya bean sauce is good with and with out. and it can not be replace by soysauce.
once you add soysauce into tom yum, it will taste different...
fresh kaffir leaves works better than dry..
but dry will still work.

I usually cook for four or more people. If you're making just one bowl, use about 20 oz of water.(small pint glass is about 16oz)
Chicken powder is a must (asleast for me)
Chicken stock from American market can be subs for
chicken power, in fact it's slot easier.
If you're a vegeterian, make the broth from carrot and celery
Add a little bit of sugar to make it sweet.
Fish sauce is a must!
Do not use soysauce in this soup!

if you can't find the kaffir leaves or the lemon grass, you can still make the soup.
the leaves and the lemon grass just make the soup taste a little more herb-like.. ( i hope i don't confuse you :(
