Honestly I was just kidding, I have great respect for Italian food being a professional cook. It's defiantly not my favorite seeing as my style is more contemporary eastern but still, it's good stuff. I rarley eat pizza. I have a friend who opened up a wood burning pizza restaurant and have had their duck pizza, where the sauce consist of deeply caramelized onions and topped with confit. My other favorite being the wild boar pizza with local boar and apples.

@memento910 I also worked at a pizzeria in Montenegro, just across the Adriatic from Italy which was fun but still, definatly not my style =] also fun fact, the concept of pizza originated in india, moved to china and was finally defined in italy. Now-a-days, theres no defining pizza. My favourite pizza i'de made was a naturally leavened dough with 200g leaven 200g poolish to the kil of flour (70% hard unbleach, 30% tipo 00) topped with green olive pesto, nettles and candied chocolate tomatoes.
