perfect couple of videos dragonboy, the thrust reduction is a funny experience. I think the bell rings to notify the cabin crew that they can start to operate.
OK - the "ding" shortly after rotation is to notify the cockpit that the gear has been retracted (not sure why it sounds throughout the cabin though). The throttle back approx 60 secs after take-off is to set the engines to "climb" thrust - after all if you left the engine at full power it would simply explode!

The reason the engines sound funny is that due to a Conservation Order, aircraft must keep noise to as low a level as possible. Its got something to do with the Loggerhead turtles or something! Believe me, my plane sounded the same and I sh*t myself big time...thought the engines were dying!!!
