mary, i dont uunderstand your recipe, because when you start to explain it,you introduce 4 ingredients then, when u are preparing the mousse you take from the freezer cream and white egg? (in the start u forget to tell us) please tell me the quantity because im getting crazzyyyyyyyy, thanks a lot !
you would get a much better chocolate mousse of you first mix the chocolate + cream, and then verry delicate at the end the egg white, it will be allot lighter.
Dear Mary Jose, Thank you for posting this recipe as it is my all time favorite dessert! However I can no longer eat raw eggs, Is there a way to somehow make the eggs safer? It is because I have been ill so am not allowed to eat the raw eggs. I KNOW by watching you cook that this is a totally TRUE choc mousse. However I need to adapt it for me, any ideas on how to help me?
I sometimes use marshmallows instead of raw eggs, my husband cannot eat raw eggs too, marshmallows are good sub for it(just melt it, and voila!), just adjust the measurement of the sugar too. :D

For any dessert recipe you need extra fresh eggs. For this mousse texture you have to add white of eggs, but if you are not sure then use just whipped cream, but the result will be absolutely not the same!
one other thing...another additive to this great recipie is some Bourbon, or even Brandy. Before cooling you can pour the chocolate mousse in wine glasses, reducing cooling time and adding elegance to the precentation. Serve w/ a slice of strawberry if desired.

You can add thinly sliced leaves of mint in the chocolate mousse or some spoons of liquor of orange.
believe me the taste is absolutly magic like this !!!!!
