@luckyfire3 not always true. If your raw almonds are NOT from the usa then chances are they are probably truely raw, although its a good idea to buy from a trusted company. You can also find raw almonds in america but youll need to buy them directly from the farmer.
You are right though most "raw" almonds that come out of cali n such are pasterized because of the laws

i would think that, while obviously far healthier than cooked almonds, dehydrating them at that temperature for an hour or two would probably destroy a lot of the enzymes. i trust gabriel cousens, but i don't know if i would eat this recipe
Still raw. The temp. of the food never actually gets to 145 degrees due to evaporation and the fact that with dehydration it is just circulating air. I believe excalibur has a reference to it on their site about the process. In anycase, even if it did get to 145 degrees it would take WAY longer than 1 hour in the D.
I say still raw...or at least still good for you. 145 in the dehydrator and 145 in the oven is not the same...NO? beats 300+ under a broiler like the store nuts.

They are still raw. The air temperatur inside the dehydrator is 145 but the almonds are not at that temperature.

I think 145 is okay for the first 1st hour, but I won't do it! 105 all the way, the enzymes are to valuable to me.
