For god sake leave it to a puro fan to have to explain everything. UWF, UWF Newborn, UWFi were all shoot style promotions, i.e. the outcome is determined, however almost all the guys were skilled real fighters too. BattlARTS & Fujiwara Gumi were both shoot style works, Pancrase was all shoot although with some suspect matchs and to complicate things further, RINGS started off as a worked promotion and then became a legit contest a few years in.

And to add to Acekichen's comments, a work using strong style (stiff), makes the match look all the more real.
Japanese pro wrestling often, in the past at least, involved tours. You would only wrestle for a few weeks at a time, then there would be a break. Wrestlers would be able to heal up after working the strong style.

This is the Bushido from years ago.
Sakuraba,Albright,Tamura,Zangiev damn they had some good fighters.
Pity the majority of the matches were fixed though.
In days before UFC this was the only form of MMA I'd ever seen.

In Japan there where/are many Shoot Wrestling organizations.
They Mix Shoots with Works. A "Shoot" meaning (Real) a "Work" meaning (Fixed)
Some organizations where 100% Shoot(Shooto,rings,Pancrase) others where 85/5 Works UWFI & Kindom,Some where 100% "works" NJPW & FMW.
