Hi Tori! As in Jamaican Jerk? I say that because down that way a few countries have their own 'jerk chicken/ pork' so to speak.
This is a Grenada style jerk. A more sweet (with the rum/ sugar) chicken than the Jamaican style. The Jamaican uses 'thyme' while this version the 'nutmeg'.
That would work wouldn't it? Perhaps too sticky? Not sure? I say 'experiment' :D
I have prepared it two ways. One is to rub the spices in the chicken and basically stew in covered dish in oven/ BBQ until cooked. The Nutmeg Syrup is prepared and then applied when grilled/ crispen (a la BBQ). A well known traditional method. However, the method shown is also very 'common' within Grenada (parts of Carribean), as well as the open fire method.
The recipe just doesn't work without the rum. A white rum would work if that is all available. Further note ** the alcohol is there (although not much). It doesn't really go anywhere in this one, hence the rum flavour sauce/ syrup.
great! Quite different. Folks familar with the Grenada Rum Sauce and variable associated recipes will love this. Those who have not tried must. I worked with powder nutmeg but if you can, use some fresh stuff. Very 'rum' tasting so those who dislike the booze will have to skip this one. It is what makes it (and the nutmeg).
