I loved this guy on PBS in my 20's I'm 60 now and instead of having food network I would love to have this guy and Martin Yan back...They were true teachers...and funny!!!!
Holy Crap! I was wondering for a longtime on when did i ever get an interest in cooking and took up culinary arts spontaneuosly at age 27.... it was a drastic carrer change from IT to Culinary. Then i remembered after seeing this video, i watch this guy a lot as a kid... So as it turns out, i've been interested in cooking for awhile now, i just forgot O.o
@BeemerPrinting its just starch and water mixed together. it thickens the juice eeking out of the ingredients while cooking and becomes a nice thick sauce.
@BeemerPrinting It's not in the video, but anytime I make this, I just use a bit extra of the light soy sauce and sesame oil that he used on the beef. I just mix it separately and toss it on at the end. There should still be enough thickening left from the cornstarch on the beef that you don't need more. Does that help?
I just finished watching a few horrible cooking shows with the gf on the cooking network in Canada this evening..... and somehow I thought of watching this guy as a kid and how great his show was. Very informative, funny and entertaining..... really would love more of this on youtube.
I had really vague memories about a cooking show on the CBC when I was really young, and then my brother showed me this and I am so glad! I did not realize how funny he was when I was a little guy.
this was one of the best new cooking shows from back in the day...I lived near Yan's Restaurant, which was in burnaby bc. It is because of Steven Yan that I know how to make authentic sweet and sour sauce, it tastes awsume with deep fried (garlic) dry pork or sparibs...creating sweet and sour pork. mmm.

i used to eat lunch and then watch this show and be hungry again. Where I grew up there weren't many asians so it looked exotic.

I love watching this show, I also miss the puns on his apron. Each episode has a different pun with the word "Wok" on it. Ahh... Nostalgia...

Oyster sauce, rice wine, dark soy sauce are all this dish is missing. Otherwise pretty nice technique for a dish designed for the home cook.
