  • @djchocolatte1 Thank you for your kind words. We all can't be as creative as Rembrandt, but, we all can be as creative as we wish when we put a pot on the stove and cook something. Cooking should be fun and personal, I think.

  • normal Jamaican Stew Chicken does have Ketchup. soy sauce is optional ( many do use it) and yea most people use red peppers most use can use both it does not matter. n if u was reading what he wrote it said we use the browning as well. cut it out n stop being negative. he did well kmt.

  • Normal Jamaican Stew Chicken dnt have green peppers..soya sauce or ketchup :/ please get it rght .. *smh* plus many of us use Browning..2 give a nice brown colour.

  • Interesting technique using the ketchup as part of the marinate process. I usually add the ketchup once I had the liquid as a gravy thickening base

  • if you're gonna marinade the chicken, you should do it in the sauces, seasoning and herbs. Why do it with the veggies? Also... I completely disagree with your philosophy on eye balling ingredients. Both at home and in restaurants, it is important to scale correctly so you wont spend too much or too little.

  • argh . well i seasoned the chicken with salt n pepper then i added the onions etc. i didnt know i was suppose to season everything. oh well. i also substituted the ketchup for some indain curry i got from the store.lets see how it comes out. next time i will pay more attention to the video. i guess i was too anxious.

  • The only thing that you are missing is that you need to brown some sugar in the oil before you cook the chicken. West indian's use browned sugar in a lot of recipes. All you have to do is cook the sugar in the oil until it is dark, but not burn. The darker the better because it adds to the flavor

  • @microdac brown sugar is used to brown the chicken. Jamaicans don't like white chicken. It's not a necessity but occasionally we use brown sugar but not all the time.

  • Iam a jamaican and i watch your video and i think you did well you got it right. But as for me i like my chicken dark so i use food browning on my chicken.

  • great video. have you thought about adding 2 tablespoons of brown sugar to the stew chicken while it simmers? It adds a nice flavor to the already tasty dish.

  • @dagopremium You are absolutely right about adding brown sugar. I have started using brown cane sugar (Instead of refined sugar), and coconut oil in my cooking. I found out the truth about coconut oil, and have discovered that it is VERY GOOD for you in so many ways.

  • You can purchase browinng from the local store. I like to use grace or maggi from the carribean grocery store but if you dont have that option. your local gtocery store should have ~gravy master or kitchen bouquet~ these both work great.

  • Nice job! it\s colour was just off a bit. It should be a rich brown colour. There are three ways I know to do this. 1 is add browning, to the marinate and a little more while it cooks. Browning is made from burning brown sugar anyways. You can REALLYbrown the chicken which will come off into the colour of the stew. Or you can cook brown sugar and oil into a carmel and them cook the chicken. Also add some cinnamon, cloves, nutmeg and allspice. In addition to the ketchup you can use tomato paste.

  • you can make browning sauce by cooking brown sugar and water and reducing it and then burn it a little till it turns dark. Also, you can add potatoes and carrots.

  • @Tchrevor when did we start adding cinnamon and nutmeg to stew chicken? all he got wrong was the time he use to make it get brown, and as you said browning or caramelize sugar would have done the job . Might just cook me some for dinner this evening.

  • @junglejammin Everyone/family and different parts of the west indies have their own versions. mine has alspice, cinnamon, nutmeg and cloves.
