  • Use Wilton Bake even strips! They are a godsend! U don't waste any cake and it doesn't over cook the outside before the middle. You wet them and pin them round the outside of the tin and bake. The cake is flat and even, I don't bake without it! U can make your own if u want, just cut up a old tea towel and soak it in water then pin it round the tin, it works as well, I just prefer the wilton ones! Good Luck

  • my grandma use to make her own stripes by cutting old towels. she would dampen then and then wrap them around the tin and use a safety pin to deal the ends together. love your tutorials.

  • Very cute cake !! Love the Baby Tiger topper.

    Not sure if you have heard of "Bake Even" strips. They are sold by Wilton. They are Silver on one side and White on the other. You soak them in Cold water and then wrap them around your pans , pin (are included) in place and bake. this ensures the center bakes at the same time as the outside. If you have a larger pan you pin them together to wrap the entire pan, they can even overlap.

    I hope you can try these.

I had come across the strips on an online store (but for large diameter tins) and had not thought to buy them for the smaller size tins. Unfortunately we don't have as many Wilton products available over here. Thanks again!

  • P.S. For some reason, when I don't spray or grease the pan (just using parchment paper) the middle of the cake never rises or forms a dome. It's always almost PERFECTLY level! :)

  • Sarah, this cake is precious! Your son is one lucky boy! Obvious that you put a lot of thought into this cake. Everything is ADORABLE. In MY experience with cake crusts, I've seen that NOT greasing or spraying the pan causes the cake to have almost ZERO crust. I simply cut out parchment paper to line the bottom of the pan. When I bake my cakes this way, I just have about less than a millimeter of crisp on the edges and then it's all soft cake! :) Hope this help! Awesome cake! :)

  • Thanks Laura!! I line my pans (bottom and sides) with baking paper (after greasing with butter). I don't have the crusting problem as much with my choc cake. Do you get a problem with the cake sticking to the sides?

  • Hi Sarah, No I never have any problem with the cake sticking to the sides. Once in a while I'll have a tiny thread or something like that and I just take and angled spatula and scrape the sides all the way down before I invert the pan to remove teh cake.

  • Hi, very cute cake! I am just starting out with cake decorating and I am wondering, do you use fondant or gumpaste? Also, I notice so many colours, do you make different colours then store them? If so, how do you store them? Thanks.

  • Hi, fondant is used to ice cakes. Gumpaste is used to make models. You can purchase already coloured fondant or you can colour it as you need it. I store mine in the fridge wrapped in cling film then placed into a bag. Good luck with your cakes

  • Thanks:) I use fondant to cover cakes. Adding tylose powder to fondant makes it similar to gumpaste - tylose makes fondant harder and therefore easier to form figurines. You can use colouring gel to colour fondant in advance. Use a double layer of cling wrap and store in a cool area away from sunlight (air dries fondant out). I use Bakel's RTR icing (=fondant), which is not stored in the fridge. Hope that helps.
