    I agree with warmfuzzy...this recipe and video are less than ideal if you want to make a flavorful pie crust(and my gawwd look at how she rolls it out...I mean didn't she notice how thin it was rolled and that the crust had CREASES?!!).

    People, if you would like a simple and good recipe for pie crust, go and check out one called ''How to make pie dough'' by ChicagoTribune.

  • the one by chicago tribune is pretty complex and uses a lot of ingredients that people in other countries dont have.. plus a food processor .. which is not that convenient... this one is good for people like me who fail at baking stuff and just want to make a friggen pie crust to put pecans in... and i made it .. and didnt fail and it actually turned out ok and not hard at all ...i think the point is that they are showing how simple it is and that anybody can attempt it

  • Well you are right about some ingredients not being available in other countries. This is a simple recipe to make an ''ok'' pie. However, there are some like me that either go to baking contests or sell them and making something passable isn't going to really keep many customers coming back. Also, anyone that has internet and cash can purchase ingredients online if it is unavailable in their country. The recipe from the Chi. tribune might have more ingredients but you'll taste the difference.

  • Since you claim to be in competitions, explain something to me. I work in a bakery and i've taken courses. And i NEVER used chilled butter, or chilled me mix in a freezer. So explain to me why almost every recipes requires chilling. I also do my dough by hand, no processor or pastry cutter.

  • Cold temperatures help a piecrust maintain its flakiness and shape. The dough is held together with ice water, which helps keep the fat distinct—warm water would soften the fat. When the dough is rolled out, the fat is flattened into flakes. When baked, the fat creates steam, which lifts the dough into flaky layers

  • Yeah, I didn't think it would make any difference before I actually tried it. To me, butter was butter and just mixed it all in the flour. But, I figured I'd give it a try since using cold butter is one to the tricks to making puff pastry so I didn't think it would hurt to try it with pie crust. Never went back since.

  • What about the flour. I normally use a pastry flour, but in most recipes i see all-purpose being used. Doesnt matter i guess?

  • Well depends on what you are making...for pie crust you'll be fine using plain all purpose flour. The best thing is to experiment around, maybe try a combination of both, it is all up to you so don't fear getting creative ;)

  • Cute dancing! there's a problem with the measurements - those discs were not 2 inches... looked less than 1 inch. And the rolled crust was not 1cm... probably less than hald a cm. Still, now I know the basics of pie crust, I'll experiment, thanks :-D
