The whole idea of this type of recipe is to maintain good health...do mature coconuts work for this recipe if you perhaps soak the meat that happens to be firmer?
Are the hemp seeds hulled, or not? The unhulled ones we can legally obtain in the U.S. are heat treated to make them unable to germinate, so I would be surprised those would be used for a raw foodist. I am hoping those will work, because they are MUCH less expensive than the hulled ones...

I used to be anti-raw because that scene is populated by esoteric nutters of the "optimum life enzyme" type and "reharmonizing inner vibrations". **shudder** That stuff and the blatant rejection of the most primary scientific principles made my toenails curl. But seeing when sane people prepare nice raw dishes and foods I actually quite like it. Nice inspiriation really. I'm gonna have to mellow out my opposition to all things raw-food:-) Good job!

Countries with people that consume a lot of coconut fat have much lower health issues than people who consume trans fats.
Also, when I eat coconut milk based ice cream I don't feel sick the way I did when I ate regular ice cream.
Keep in mind that coconut oil is rancid resistant and melts @ 76', & becomes a solid below 76'. It is one of the top 5 best oils for your body and has a higher smoke point @ 450', great for everyday cooking!
Coconut oil is also great for treating Thrush, simply swipe the oil on the inside of the baby's mouth and on the mama if nursing several times a day to rid the Thrush.
You may have discomfort with traditional ice cream also because of homogonized milk which is sooo bad for you.
this is a great recipe, and the chef is really sweet, but there is just one small critique: she talks so, so much. it's just a stream of words. maybe streamline the talking a bit, so the real star of the episode is the dish. but overall, wonderful, as always.
