How do you prevent the radicchio plants from bolting so that the heads will form?

@jcimaglia you can pinch off the heads but its usually the weather that causes bolting.

Did you start them from seed? I have plans to put in 120- 200 new lettuce for the fall i started from seed and was wondering how long should it take to reach the size of plant you have there.
