I must say AMEN to all of the recipes and pairings.

Scott and Jana, I would add only one idea to, if even possible, to enhance the evening:

Before the meal, as you go around giving thanks for God's blessings, toasting with the Jana "Blanc de Noir" would be sublime:)))
