It wasn't "covered." From what I've read, this was written by a woman, who allowed them to use it for Patch Adams, and they got Rod Stewart to sing it. This is not a Rod Stewart song. It's a song Rod Stewart sang.
I'm on the fence about it though, I think they both were equally good in their own ways, except when Enterprise butchered it and made it into some Jonas Brothers pop piece of crap.
It's possible they used the Stewart version for the pilot episode, because it probably would have been cheaper to buy the rights for a single use, than buy the rights for the song and have it sung by Watson, and use it for 4 seasons.
