I thought it was a nice video though I dont think using live test dummys was a good idea. If im right the vest also had stab plates. Kevlar is not the most stab or cut resistant material though it provides good low cost bullet protection. Weight is an issue as is manouverability

"seven point six two" is not just AK-47. The vest states "7.62mm TT" - Do you know what that means? Well, the Tokarev TT 33 is a pistol from WWII that is amazingly popular still, because it's a very good design. It uses a 7.62x25mm PISTOL cartridge, that's somewhat weak by today's standards.
Your vest protects against up to .44 magnum. It does not protect against an AK-47. Any rifle round with more power than the .44 magnum will easily go through it.
thats level 3a, not level 3, the 7.62 is not from rifle rounds, it just means it can stop the x25 pistol rounds like the tokerev, any rifle round will still penetrate. In order to stop rifle rounds you need plates.

some vests are not stab proof, most of em are made to stop grenade fragments and pistol rounds, when you add SAPI plates you can stop most rifle rounds and even armour peirceing rounds

I think that the pellet gun is used for comedic effect. I don't think there is ANYone who would genuinely mistake the two for each other.
