@0omatthewo0 : The person in the video probably is. Even if it doesn't look professional to us, it's still very hard to do that. Also, the egg probably needed about 15-20 more seconds of cooking time; not that runny eggs are bad or anything.

FYI - if you're not familiar with omelette over rice (aka "omu-rice") dish, it's a Japan style omelette (scrambled inside) placed over a mound of fried rice (flavored w ketchup). The omelette is not well-done intentionally for 2 reasons: 1) so you can slice it in half and it "pours" itself over the rice to cover it, and 2) for the fluffy texture. Making this dish perfectly requires a good amt of practice so the cook/observer are laughing at the somewhat disheveled result while having fun too.

In Japan, most eggs are salmonella-free. Eggs are checked at farm or factory.

So we can eat raw eggs safely.

salmonella gets killed when the temp is reached around 130f or 55 C.

egg curdles at around 80 C. That is way above the temp required to kill the bacteria. this video it is about 95% curdled

Raw eggs are even kept "raw" in hollandaise sauce and still not curdled and still safe to eat. You can even have a hot steaming rice in a bowl and place a raw egg , mix it around and add soy sauce and it is perfectly safe because the rice is just below 100C and would kill the bacteria in contact

It DID look good though. In this specific recipe the eggs are normally cooked more than that. They are suppose to get fluffy and more done. I know a lot of the recipes they make have raw or only partially cooked eggs, but omurice isnt suppose to be that raw.
