  • Hey Joe! I was wondering if it was necessary to cook the pumpkin. I talked with my local beer store owner and was told that the pumpkin in the Libby's can was already cooked in the can. Any thoughts?

  • @ghaff11 I don't think it is necessary, but it DOES toast it and add a nice sweetness to it, like a sort of caramelized flavor. The pumpkin in cans is cooked--thats the only way it could be so smooth and ready to put into a pie. But I would recommend baking it to help bring out the pumpkin sweetness and flavor. Cheers!

  • Hey Joe, Why do you need to roast the pumpkin? Why do you need to add it to the mash? Seems to me adding at the boil would be better perhaps but what do I know lol. Thanks for your answer.

  • @dljones33 Roasting the pumpkin adds a nice toasty flavor and makes the sugars in the pumpkin pulp more pronounced (I think anyway). By mashing the pumpkin, you give it plenty of time for the flavors and sugars to be absorbed into the wort and don't have to worry about filtering out the pulp later along--like you would after the boil. I did it mostly to make sure I wouldn't have a super thick trub sludge at the bottom of the fermenter that was pumpkin remnant. Hope that helps! Cheers!

  • Hey Joe, I brewed this recipe up and served it to my friends today. They loved it! The keg is pretty much empty. Can't wait to tweak it next year. Only minor adjustment they suggested was more pumpkin and or spice. Thanks, cheers!

  • @rocknrollpriest Rock on! Yeah--I like how the spiciness wasn't as strong as say a spiced Christmastime ale, but can definitely see if you were to bump up both the pumpkin and the spice you'd have a delightful brew. Brew on!

  • Joe, what brand/model/size mashtun do you use?

  • @rocknrollpriest It's a converted Coleman cooler, can't remember what size--it's one of the bigger models. I'd say the bigger the better--that way you can do larger mash schedules without worrying about overflow. I could easily mash 25lb of grain in mine.

  • Looks like a great recipe to try! Do you think the brew in a bag method would work well with this recipe to decrease the "junk" and chance for stuck sparges?

  • @ruggend Well, I'm sure the BIAB method would work well for all parts of it aside from the pumpkin puree. If you did a BIAB, I'd think it would probably be better to use fresh pumpkin that was chopped up and baked rather than the puree. The puree might go straight through the bag and mess up the brew--as I think what causes the stuck sparge is that puree binding up the grain hulls. So yeah--if you do a BIAB on this, definitely go with pumpkin pieces rather than canned. Cheers--and thank you!

  • @lemaitrethemonk I have not noticed any difference in flavor using the stabilizer. I have found that I've had REALLY good sugar extraction using the stabilizer though--so much so that I've used it with every batch I've made AG. I think it's a very good product for what it says it will do. Cheers!

  • @wesley5138 I believe I let this one sit in secondary for about 2 weeks--maybe a tad bit more. By the time it was put into the keg, it was a very rich dark orange, with only a little bit of opaqueness in it.

  • One of your funniest videos yet, but as always, very informative. I did a Grand Cru from Midwest Supplies two and a half weeks ago, which was my third all-grain but my first recipe to have other adjuncts (honey, coriander, orange peel). This video has definitely piqued my interest in trying this recipe. Job well done!

  • nice.not all grain yet.someday when i learn the ropes better.was gonna do a pumpk, my first cuz all the winterbrews were comin in and couldnt find a pumk one except a shitty jacks,ha.doin a ale with crystal malt and willamette hops one gallon.gonna keep doin 1-3 gallon continuous after each primary.

  • @jmohno All grain isn't too much more difficult than extracts--but does take a bit more time. I'm actually going to be doing a series on an all-grain batch to show what I'm talking about. Hopefully will be up within the next month or so. Cheers!

    I was about to start pestering you!!!! Great to see you brewing AG with the all the equipment you got hold of.

    I did my 1st AG a couple of weeks ago and bottled it yesterday. Done in the BIAB method as I've not got the space or money for a tun. It worked out great and am going to do an old speckled hen clone this weekend :-)

  • @lunarrn I agree--I live by the code. I work in a very low key office, so we're allowed to wear flip flops/shorts/whatever every day of the week. So come spring/summer, I don't wear shoes at all for months. It's always weird having to get back into shoes in the fall... :-)
