This is a good video. I have built a couple of Fender style guitars and I have used a product called microplane to carve the back profile. They are like a cheese grater for wood. They take of lots of material per stroke and leave a fairly smooth surface behind. If you turn them relative to the neck you can really control how much material you carve off. They're very nice.

In our shop we do most of that with a spoke shave. Do you rasp the whole thing from when its rough cut?

I've used spoke shaves to carve necks before. Just personal preference is why I rasp the whole thing.
