I would p[eel, slice and blanch them..and then dehydrate them and store in jars..or even grind some of the dried for onion powder..if you don't have a dehydrator..you can do it on cookie sheets covered in parchment in your oven at 150-175 degrees...just be sure to blanch them or the take to long to dry!
Well, this is late but you can use it for your next harvest. Slice the onions and put them into a crock pot on low. After about 24 hours, they will be caramalized. Then you can put them into cans and can them in a pressure canner. You can add garlic, spices, apples or whatever you want before they are canned. Voila, instant caramalized onions for steaks, burgers etc. Hope it helps.
I would hang them in pantyhose in a dark cool room. Tie a knot in between each onion. Then start dehydrating them so you have them in the pantry. Just do a few trays at a time.
I always store mine in an old pair of nylons and hang them up--I did just watch a video where the guy unwound one of those bath scrubbies...it seems they are just a long nylon tube and perfect for onions.
@Iam1uglyguy you must live close by then if you went through GA.... didnt you say u lived in FLA? should have gotten some vidalia onions thay are in season...obviously :)
@see3ga Nope I Live in Ohio. BUT I travel ALOT for work. Was just in MN, WI, and IL this past week I even met Minbound. I have to say I am jealous of the huge amount of free onions!!!!
Dehydrate will be your 1st choice. put them in a nylon and let them hand in a cool dark place. I placed 3 onions in a bowl in 3 rooms for health reasons and after 3 months I had to use one of the onions (emergency dish and I had no onions) and the onion was great....very surprised.
