i have a high powered wok stove of 9kw so not as powerful as chinese ones but still more than average domestic cookers. should i maybe heat the wok and add oil on perhaps less than max power as the thing is so intensely powerful. most of the chinese chefs seem to cook full heat on short bursts and have the flame touching the edge of the wok rather than the base for long periods on these videos. whats technique should i be using with high powered wok burners like my 9kw burner

Should i be letting the wok get super heated before adding the oil. i'm talking super hot so the oil produces a cloud of smoke not just slightly smoking. shud i be turnign the heat to max after adding the food to the wk and start on a slightly lower heat on high powered stoves
OK...I'm gonna spoil this, sorry...As far as any health code violations...that depends on where you are...this is a restaurant. In a hospital kitchen, the requirements are much more stringent. There, he should be wearing a hair net (of course), and would be wearing vinyl gloves to handle any food. And using a cooking tool to turn on water? That could send red flags up to an anal retentive inspector for sure. So there's "violations" there...IF you're paranoid like food inspectors are :)
@LHZZ12MM When the video maker writes there weren't any health code violations... I'm sure he meant it for Restaurant standard, like you said this is a restaurant. Not hospital kitchen health code, or health code for a space station. :)

@GhostPirate6 i i saw one with a knee operated gas lever for quite cheap which supported lpg gas. I though about getting one and having it outdoors under a canopy. i think it was water cooled also
is that water tank constantly being filled and the tap left running to keep the system cool or is that used for chefs access to constant hot water for adding to dishes? or is it a combination of both used to keep the steel from over heating and also to use for food dishes when required. i have seen some stove have the tap constantly left running to keep the metal surface cooled and it gets so hot the water evaporates quickly

Why is it that we cannot reproduce Chinese cooking at home? Look at the water and oil transfers. The huge slotted disks are great as is the big pot of oil next to the wok (as well as the water nozzle that turns on and off without any knobs). Of course, the wok burner is truly amazing. How many BTUs is that thing? What an inferno...
Excellent cooking demonstration and I love Chinese food. The only problem for me is I wish I could find a Chinese restaurant that DOES NOT use MSG in their cooking. MSG gives me horrible headaches!
