It's a 3 phase motor which creates a spinning magnetic field. This moving field induces eddy currents in the object that drags it around with the field (slightly slower actually).
It's exactly the same principle as induction motors, which Tesla invented.

This technique is used to generate electricity, all the time, all over the world!
The rotating egg is replaced with a rotating shaft, with something driving it, such as a steam turbine.
the egg is called a rotor which rotates inside stator coils and generates 3 phase AC electrical power.
