The restaurant grading system is a serious business and a chef's No.1 fear is to see that guy walk in. I got a 99% score in my last visit, but if they walk in on a really busy day - you're screwed

Busy or not, if the food is unsanitary, don't serve it. Even if it hurts business, if you have a soul, you won't sell food that will make people sick.

@LordOfTheGnus I'm not saying the food is unsanitary - that's definite closure, but it's more precise than that to do with temperatures, general tidiness and overall impression. Not so easy to maintain during that busy lunch hour

Good Video. Interesting about the grades... funny how I had not heard of this until now.

If it were up to me, any restaurant below a 95 would fail. When it comes to food I am pretty serious about it.

When it comes to cooking food for someone else, even more so.
