The other challenges were live to the people in the same room as him (obviously), but since they were regular episodes they then got edited/processed then put on TV months later. And I think the restaurants were open when he did them, cuz you do see some people just eating regularly while others are cheering.

Drinking large amounts of water is not advisable though because it's extremely dangerous. A lot of people have died from water intoxication.
