Many countries cooks with yougurt ..... when I cook stuffed baby zuccini I make a stock with lamb stock and yougurt and believe me its so yummy .....:o)

Come on folks. They must know what the ingredient is going to be before it's announced.
The proof of that is in the other food that they have lying around i.e. prepared stocks, truffles and crab brains. These are not things that the show would have lying around 'just in case'.
Well, from what I hear, they are given 5possible ingredients as the theme ingredient. Then the chosen Iron Chef and challenger calculate what the possible theme ingredient might be and get the supplies such as crab brains and what not themselves. I heard it's a week in advance or something.
That's why other types of food are lying around on the side early on. If they guess the theme ingredient wrong, they are stuck with what they've supplied themselves and use them in their own creative way. Once again, it's from what I've heard. To me at least, it sounds logical.
@AdamWoodhams they are given a list of possible themes. the chefs then provide the producers with a list of things they'd use with each ingredient, then the producers supply those other ingredients once they decide the theme. the chefs have an idea of what it MIGHT be, but not an exact idea. hence the amusement at the reactions. chen was probably thinking "oh great why couldn't they have picked something else on the list?"
He does look like he is going to cry! I had two Chinese-born roommates in college and they thought yogurt was disgusting. I do remember Chen baked fish in yogurt in a later challenge, though, so he probably did okay here.

The funny thing about this is that Chinese yogurt is the best kind I've ever had. But I really can't think about anything they use it with cooking.
