Can't all the handshake conversation be snooped as unencrypted data at that time and the rest be useless? Obviously timing would be important then cause the intrusion would have to happen at the time of the handshake if I'm thinking right.

There's one thing I disagree with, SSL does not prove identity. Even crooks can start a fake business, it's not hard.
I think it's just a way to screw people for money.
I'm all for encryption, but verifying identity is a joke. All that matters is reputation.
