I happen to be very proficient in Cambodian cuisine and I like to learn about how the Thai cook similar dishes. @TheBopha20 People have different ways of cooking. Pad thai can be SOOOO versatile . There is no "ONE WAY" to make Pad thai. She also has a video on how to make the sauce :D. As for the ingrediants you used for the sauce, its perfectly fine. I would omit the lime but peanut sauce is not nessecary imo. But everyone has their way of making it :) Hope this helps.
I'm Thai and I can honestly say that this lady did it the right way. This is how Pad Thai actually looks like. Westernized Pad Thai looks orange because they add paprika for color and is only for presentation. If you want the real one, This is it!

In thailand we use fresh noodle but if you use dry noodle soak them first with warm water 5-10 mins before you use it in your pan fried. Also it's look like u been used fresh tofu too! I suggest people should deep fried the tofu first to make this right padthai.

I'd suggest people who are watching this VDO to first put the dry noodle that she used in a warm water to soften it, NEVER put the noodle dry like that ! and ONLY put the tofu only at the very end or you will smash it all like her.

Adding water when cooking or " steam cook" will make them get too soft and break, especially with low temperature cook. If the tamarine paste will make the sauce looks too dark and your padthai looks unpresentable, you can just leave it alone. I didn't mean to against you. But so doubtful if you had restaurant experience.
Pad thai has as many variations as there are people making it. The version I learned from my Thai wife's mother includes Chinese chives, dried shrimp and sweet pickled turnips. Also, the noodles are the larger kind (sen lek), soaked for a few minutes in hot water to soften them before adding to wok.

My dad is British and my mum is Thai... This is how Pad Thai is supposed to look like. You should know, if you've been to Thailand. Go to any street shop, or any top restaurant, and you'll see Pad Thai is not meant for aesthetics. It is meant for taste and smell.
And your English is rather attrocious if I do say so myself. You continuously make errors, such as 'there versus their'. Learn English before you criticize.
I think you need to soak the noodles first so they become pliable.

This is TRUE Pad Thai. What you usually eat is Westernized Pad Thai, to look good on the eyes. Much like most of America, appearance is everything.
